I guess someone needs to start this off so here's my entry.
BLACK BEAN CHILI VERDE 2005
INGREDIENTS:
2 ¾ to 3 lb. LEAN DICED PORK
3 SHOTS OF GOOD TEQUILA
3 to 4 tsp. CHOPPED GARLIC
1 MEDIUM to LARGE ONION
2 BUNCHES of CHOPPED FRESH CILANTRO
1 CAN (7 ¾ oz. size) EL PATO MEXICAN TOMATO SAUCE
2 CANS (7 oz. size) DICED GREEN CHILIES
1 ½ LG. JARS (24 oz. size) SALSA VERDE (MED.)
2 CANS (14 ½ oz. size) MEXICAN STYLE TOMATOES
3 CANS (15 ½ oz. size) BLACK BEANS
BROWN PORK IN LARGE OILED SKILLET.
ADD TEQUILA, GARLIC, DICED ONION, CILANTRO, EL PATO, AND DICED GREEN CHILIES.
SIMMER FOR 1 HOUR.
TRANSFER TO 5 qt. CROCK POT SLOW COOKER, ADD SALSA VERDE, MEXICAN STYLE TOMATOES, AND DRAINED BLACK BEANS.
COOK FOR 6 to 7 HOURS IN CROCK POT ON LOW.
SERVE WITH SHREDDED CHEESE AND ENJOY.
THIS IS THE SECOND EDITION OF MY BLACK BEAN CHILI. HOPE YOU ENJOY IT AS MUCH AS I DO.
