Title: Boo has been baking!

the past few weeks, Ive been craving the odd little sweet treats my Mum bakes around this time of the year on the run up to Christmas, So I poked and poked, and poked her some more on MSN to send Fee and I some recipes... My favourite, being Pecan Tassies and then Fee's favourite that Mum made for him back in June, being Rock Cakes. I whipped up a batch of each on wednesday and Fee loved them so much I thought we'd share the recipes with you all, (note that they passed the Mother-In-Law test yesterday too Woot!)

Pecan Tassies

Prep: 45 min., Chill: 1 hr., Bake: 20 min., Cool: 30 min. If you don't have four mini muffin pans, you can bake these in batches. Keep the extra dough chilled until you're ready to use it.

Yield
Makes 4 dozen

Ingredients
1  cup  butter, softened
1  (8-oz.) package cream cheese, softened
2 1/2  cups  all-purpose flour
1 1/2  cups  firmly packed brown sugar
1 1/2  cups  chopped pecans
2  large eggs
2  tablespoons  butter, melted
2  teaspoons  vanilla extract
1/8  teaspoon  salt
Preparation

1. Beat 1 cup butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add flour to butter mixture, beating at low speed. Shape mixture into 48 balls, and place on a baking sheet; cover and chill 1 hour.

2. Place 1 dough ball into each lightly greased muffin cup in mini muffin pans, shaping each into a shell.

3. Whisk together brown sugar and next 5 ingredients. Spoon into tart shells.

4. Bake at 350° for 20 minutes or until filling is set. Cool in pans on wire racks 10 minutes. Remove from pans; cool on wire racks 20 minutes or until completely cool.

Rock Cakes

This is a really easy recipe, they'll go down well with a cuppa.


Ingredients
8oz Self-raising flour
4oz Marg
4oz Castor sugar
4oz Dried Fruit (such as currants and/or raisins)
1 egg beaten
A little Milk
A medium sized greased Baking Tray


Method:

Sieve flour

Rub in marg until the mixture is like fine breadcrumbs, then add sugar and fruit

Stir in beaten egg and enough milk so the mixture is of a sticky consistency

Then take a spoonful of mixture and drop it into little heaps on to the baking tray. Allowing enough room for the mixture to spread during cooking.

Cook in a preheated oven 200°C (Fan-assisted oven 180°C) for 12-15 minutes until crisp and golden brown.

Once cooked lift carefully onto a wire cooling tray.

Serve with tea or coffee.

To Vary: Use chopped peel, Nuts or even Chocolate chunks instead of dried fruit.

Fee is ever so happy with all the baking of yummies that Boo is doing in our kitchen, and I look forward to eating more all this month and through out Christmas. Yay Yay Yay Boo, the lovely wonderful baker. hee hee hee hee. I want to make some of the Rock Cakes next time with Egg Nog instead of milk mmmmmmm. Hungry Hungry Fee  :dle:

Oh Boo, those Pecan Tassies look to die for! :drool: I may have to just jump through this screen and into your kitchen. Thanks for the recipes!  :hug:
