Title: Cream Cheese Pound Cake
Post by: Kat on April 17, 2008, 08:02 AM
Thanks Decoy!!!  I love cooking and recipes and stuff, this board is a great idea!

This recipe is one that I found on allrecipes.com.  It is the best pound cake I have ever had.  So moist on soft on the inside, yet with a nice crust on the outside.

Cream Cheese Pound Cake

1 (8 ounce) package cream cheese
1 1/2 cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 325 degrees F (160 degrees C) grease and flour a 10 inch tube pan.
In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
Pour into a 10 inch tube pan. Bake at 325 degrees F (160 degrees C) for 1 hour and 20 minutes. Check for doneness at 1 hour. A toothpick inserted into center of cake will come out clean.

I baked mine in a loaf pan.  If I remember right, I had enough batter for two loaves.  I sliced the cake and buttered each side of the slices and grilled it on my griddle until it was golden brown on both sides.  I then served it over homemeade peach ice cream with a caramel sauce.  That dessert was a big hit.

Yes, just don't do Kat's last step there, of buttering both sides (after it's sliced) to add all those calories back in! :lolg:
