Title: A few Casserole recipes

Here are a few of my favorite casseroles to make:  I'm not saying they are by any means healthy either.   ;)


Chicken Stuffing Casserole

2 large potatoes, peeled and cubed

2 medium carrots, coarsely chopped

1 package (8 ounces) crushed corn bread stuffing

1/2 cup butter, melted

3 cups cubed cooked chicken

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

1 can (10-3/4 ounces) condensed cream of celery soup, undiluted

1 cup chicken broth


Place 1-in. of water in a saucepan; add potatoes and carrots.  Bring to a boil.  Reduce heat; cover and simmer for 5-7 minutes or until crisp-tender.  Drain and set aside. 

Toss the stuffing and butter; spread half in a greased 13-in. x 9-in. x 2-in. baking dish.  Top with chicken.  In a large bowl, combine the soups, broth, potatoes and carrots; spread evenly over chicken.  Sprinkle with remaining stuffing mixture.  Bake, uncovered, at 350 degrees for 40-45 minutes or until heated through.  Yield:  6-8 servings.

** Note: I don't like carrots, so I pretty much omit them from every recipe I make and it tastes just as good without them, if you don't like them either.   ;)  )

Comforting Chicken

1 tbsp. vegetable oil

1 tbsp. butter or margarine

1 pound boneless skinless chicken breasts, cut into cubes

1/2 cup finely chopped onion

1/2 cup finely chopped green pepper

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1 cup water

3/4 cup uncooked long grain rice

1/2 tsp. salt

1/2 tsp. chili powder

1/4 tsp. pepper

1/4 tsp. paprika


In a large skillet, heat oil and butter.  Add chicken, onion and green pepper; cook and stir until the chicken is lightly browned and vegetables are tender.  Stir in the remaining ingredients.  Transfer to a lightly greased 1-1/2 qt. baking dish.  Cover and bake at 375 degrees for 55-60 minutes, or until the rice is tender.  Yield:  4 Servings.

Those both look delicious, and Boo's favorite food is Chicken. No Chicken is safe around that girl LOL......................Fee  :laugh2:

So glad I finally had some time to get on here.
These look soo easy to make and their appeal for a hot filling meal is up off the charts.

Now that cold weather is on it's way anyone else have great easy receipes to share? :waveh:
