Title: Hawaii Meatballs - Waikiki Meat Balls
Post by: funfly on July 12, 2008, 01:52 PM
Combine in bowl, mix well: 1 1/2 pounds ground beef; 2/3 cup bread crumbs; 1/3 cup minced onion; 1 egg; 1 1/2 teaspoon salt; 1/4 teaspoon ground ginger; 1/4 cup milk.

Shape rounded tablespoons+/- of meat mixture into meatballs and cook until browned in 1 tablespoon shortening in large skillet.  Remove meatballs, and keep warm. Pour fat from skillet.

------------------------------

Mix together and then add to skillet: 2 Tablespoon cornstarch; 1/2 Cup firmly packed brown sugar; 1/3 cup wine vinegar; 1 Tablespoon soy sauce and the juice of 1 (13 1/2 ounce) can pineapple tidbits.
Cook sauce over medium heat, stirring constantly until thickened. Boil and stir for 1 minute.

Add to the sauce in skillet: the meatballs, pineapple tidbits and 1/3 cup chopped green pepper; heat through..  serves 6
------------------------------

*now, of course, nothing ever goes same exact recipe for me...added a little more juice of apricot to the pineapple juice (bc I used more meat to begin with and didn't have anymore pineapple)

I served it over rice.

I should have made the salsa but was in a hurry so I just made the Cinnamon Chips - they were yummy - served them with dinner of "hawaiian meatballs", rice....

I tried to do it from memory for the Cinnamon Chips....so I didn't use water, instead I spread butter then sprinkled the cinnamon/sugar  (dumbo me, will remember to read directions next time...I hope :lolp:)

Oops, just read "cool completely", hmm that's why kid said it was hot -hehe

Good Idea!  What's your Hawiian meatball recipe?

here ya go!

Thanks for this recipe Funfly!  I'll have to try it out soon.  On the wine vinegar, do you use red or white?

I used white....but the sauce itself is dark from the soy sauce, so red would probably be ok too.
